Around the barn we call our cookbook Across the Tack Trunk but sometimes the recipe is IN the tack trunk! Though this cute guys mouth is watering for a stashed grilled cheese- our mouths are watering for some pumpkin cake pie!!!
(This recipe makes 2 pies or 1 - 9x13 cake)

Pumpkin Cake Pie

1 - 15 oz can of pumpkin
3 eggs beaten
1 cup of sugar
1/4 tsp ground cloves
1/4 tsp ground ginger
1 and 1/2 tsp ground cinnamon
1/4 tsp salt
1 -5oz can evaporated milk
 
        Topping

1 box of yellow butter cake mix
1 cup of pecans
1 and 1/2 sticks of butter

Mix all ingredients but topping and divide equally into two pie pans... ( you can make ONE 9 x 13 inch cake pan if you choose) Sprinkle 1/2 box of cake mix on one pie and repeat to second pie..
Sprinkle 1/2 cup of pecans on each pie. divide
melted butter and drizzle equal parts onto each pie.
Bake 350 for 1 hour! enjoy. Its way yummy! ( and looks better than this pic!)  and yep...It was gone in an hour!
